If you love the flavors of pickle roll ups but want a more festive—and I think easier—way to serve them, this pickle roll up dip is the perfect solution. All the same creamy, tangy goodness is mixed together and served with buttery crackers, making it a spreadable, shareable version of the classic snack. It’s a no-fuss appetizer that comes together in minutes and disappears just as quickly!
• 2 Blocks (8 oz.) Plain Cream Cheese, room temperature
• 24 oz. Jar Baby Dill Pickles
• 6 oz. beef lunch meat, (I use Buddig Beef)
1. Roughly chop the beef lunch meat and baby dill pickles, reserving a couple of tablespoons of pickle juice.
2. In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.
3. Fold in the chopped pickles and lunch meat, stirring until evenly combined. Gradually add pickle juice, one tablespoon at a time, until the mixture reaches a spreadable consistency.
4. Transfer to a serving dish and serve with buttery crackers on the side.
